🇵🇪 Peru

🌏 Origin: Peruvian cuisine is the fusion of indigenous Peruvian cultures, Spanish, Arab/Moorish, African, Japanese and Chinese influences. The result; ceviche — raw fish marinated in “tiger’s milk” (citrus juice, spices, herbs, onions and chili). And; Lomo Saltado — stir-fried soya sauce marinated beef strips with onions, fried potato chips and steamed rice, a so called “chifa” dish. As well as; cancha — a fried large corn kernel that’s crispy and salty. Often served as a snack.

😋 Location: @aymara_restaurant has since 2014 been serving Peruvian dishes with local Norwegian ingredients in Parkveien.

They have an a la carte menu, a Nikkei-inspired tasting menu (Japanese influenced), as well as a sushi menu. They even offer take away!

We visited on 14th February 2023.

🍹 Drinks: Chicha Morada is a typical Peruvian non-alcoholic drink made of purple corn, fruits (pineapples, apples), spices (cinnamon, orange zest, clove) and lime. Highly recommended!

💸 Value: ~1500 kr for two tasting menus and drinks by the glass.
